1 Package Zatarain's Dirty Rice Mix
1 Onion, Chopped
1/2 Green Bell Pepper, Chopped
2 Stalks Celery, Chopped
1/2 Cup Vegetable Oil
2 Chicken Breasts
1/2 Pound Smoked Sausage
1 (8 Ounce) Jar Sliced Mushrooms, Drained

cook The Rice According To Package Directions. This Is Best Done In A Rice Cooker, But A Microwave Is All Right. Sauté The Onion, Bell Pepper And Celery In Cooking Oil. Boil The Chicken Breasts And Cut Them Into Bite-size Pieces. Parboil The Sausage. Drain And Chop Finely Or Pulse In Food Processor. Combine All Ingredients And Adjust Seasonings. Let Sit For At Least 1 Hour.

warm In Microwave, Taking Care Not To Stir Too Much. The Flavor Is Best When The Rice Kernels Are Unbroken And Not Mushy.
